Fruit quality is one of the important factors in the expansion and marketing of horticultural products. Numerous studies have shown that the external application of some chemicals play a significant role in increasing the quality of fruits.
This research was conducted in order to evaluate the fruit quality using oxalic acid (0, 1, 3 and 5 mM) on two plum cultivars "Gold Drop" and "Shabloon" in the form of a factorial experiment based on a randomized complete block design.
. Foliar spraying was done 10 days before commercial ripening (based on total soluble solids index) on ten-year-old trees of two cultivars, "Gold Drop" and "Shabloon".
Qualitative parameters such as fruit firmness, total soluble solids (TSS), titrable acid (TA), fruit juice pH, vitamin C, Total phenol compositions, total flavonoid and total antioxidant capacity (DPPH) were evaluated. The results showed that in both plum cultivars, increasing the concentration of oxalic acid decreased the amount of soluble solids and pH, but fruit firmness, titratable acidity, phenol and total fruit flavonoids increased.
In both cultivars, the highest amount of fruit firmness, titratable acidity and flavonoids were observed in 3 and 5 mM Oxalic acid.
